Easy, Company Worthy Salmon



Flaky, light, creamy, savory, melt-in-your-mouth. It's hard to put into words the wonders of this easy and beautiful main dish!

Salmon wrapped up in a crisp pillow of phyllo with a creamy cheese and herb surprise in the center. Doesn't that sound heavenly? And that's not all. It is so very easy and almost foolproof!

We are having company at StoneGable and this recipe can be made ahead and popped into the oven. Impressive and delicious, my guest will think I fussed all day. Shhhhh, our secret. I want to fuss all over my guests, but just not fuss in the kitchen!




StoneGable Salmon En Croute With Cucumber Dill Sauce

6 salmon fillets
1 package phyllo dough
1 stick butter, melted
salt and pepper

1 package cream cheese, room temperature
2 TBS fresh dill, chopped
2TBS fresh chives, chopped
2 TBS fresh parsley, chopped
juice of 1/2 lemon

1 container sour cream
1 cucumber, peeled and finely chopped
3 TBS fresh dill, chopped
2 TBS fresh parsley, chopped
juice of 1/2 lemon
salt and pepper

In a large bowl combine cream cheese, herbs, lemon juice, salt and pepper. Mix and set aside.




Preheat oven to 350 degrees.
Open phyllo package and lay 1 layer of phyllo on work surface. Cover remainder of the package with a damp towel. DO NOT let the phyllo dough dry out!



Brush with melted butter. Make sure to cover the whole sheet. Brush gently~ phyllo is fragile.  Repeat with a second sheet of phyllo and top with a third (do not put butter on the third piece).



Spread cream cheese mixture on the phyllo. See picture for placement.
Put salmon on top of the cheese. Salt and pepper.



Wrap long edge up and around the salmon.



Fold in the left and right sides of phyllo.



Wrap up and brush with butter.



Place on a baking sheet sprayed with cooking spray. At this point the salmon can be wrapped in plastic wrap and put in the refrigerator.  Bake salmon at 350 degrees for 20-30 minutes, depending on the salmon thickness. Do not overcook! Let sit for 5 minutes.
I cooked my thick salmon for 20 minutes. It will continue to cook as it sits.

Cucumber Dill Sauce
Mix sour cream, juice of 1/2 lemon, cukes and herbs together in a bowl. Put a dollop of Sauce on the plate and put salmon on top of it.
