Tea Sandwiches and Punch:


For over 100 years,Tea Sandwiches have made their appearance at most occasions hosted by women of good breeding. But sadly, they fell out of vogue some years ago. That is until lately. They are making up for lost time!

 In the past few months I have attended three functions where these lovely, dainty savories were served. And in planning a bridal shower, my daughter (the very young matron of honor) requested we make them. And if I do say so myself, they were a hit!

Upon request, I am sharing the tea sandwich recipes, as well as StoneGable's Strawberry Lemonade Punch.

Tea sandwiches are so easy to make, can be made up ahead and are very filling. Great for a large party!

Pimento Cheese Finger Sandwiches on Bunny Bread:


2 cups shredded good quality extra sharp Cheddar cheese (I use 1 cup cheddar and 1 cup Jack)
1 (4 ounce) jar chopped pimentos, drained and chopped
2 oz. cream cheese, softened
1/2 cup mayonnaise, or more if needed
1/2 TBS grated onion
dash of Worchestershire sauce
salt and pepper
Soft white bread
snipped fresh chives

Mix all ingredients together except bread and chives. Cut crusts off bread and spread with pimento cheese spread. Roll up witdthwise and cut into halves or thirds. Plate standing on end. Sprinkle with chives.

Chicken Salad with Dried Cranberries and Toasted Pecans on Wheat Bread



Store bought chicken salad 1 lb container
1/2 cup dried cranberries
1/2 cup toasted pecans
Whole wheat bread

Put cranberries and pecans in the food processor. Whizz until finely chopped. Mix into store bought chicken salad and stir to incorporate. Cut crust off of wheat bread. Spread chicken salad on bread and put second piece of bread on top. Cut into triangles.

StoneGable Egg Salad with Cream Cheese and Herb Tripple Decker Sandwiches

To assemble: Cut crusts off of white bread. Spread egg salad on two pieces of bread and stack on top of eachother. Add a piece of bread on the top. Cut in thirds widthwise.

Turkey and Cheddar on Rye with Poppyseed Mayonaise with Apples and Balsamic Reduction



This tea sandwich won Miss Popularity! Everyone raved!!!!

1/2 lb good quality off-the-bone turkey breast
1/2 lb good quality sharp cheddar cheese
1/4 cup poppyseed dressing (I use Brianna's)
1/4 cup real, full fat mayonaise
2 granny smith apples
1/2 cup balsamic vinegar
rye bread

To make the balsamic vinegar reduction, heat vinegar in a pot on low heat and simmer until it reduces to 2-3 TBS syruppy liquid. Remove from heat and reserve.

 To make poppyseed mayonaise, conbine poppyseed dressing and mayonaise in a small bowl.

Cut crusts off of rye bread, and spread bread with poppyseed mayonaise. Top with a turkey slice and cheddar cheese. Put an apple sliver on top of the cheese and drizzle with balsamic reduction. Serve open faced.

StoneGable Strawberry Lemonade Punch
This was a punch of necessity. I really didn't like any of the punch recipes I had. So I made up my own.


4 quarts Crystal Light Lemonade
1-2 lg pkg frozen strawberries, thawed and mashed or whizzed in food processor
2 lg bottles Sprite or lemon lime soda
1 small container lemon sorbet, very soft
ice ring, recipe follows

Mix all ingredients together in a large punch bowl. Add ice ring.

To make ice ring: Fill a fluted tupperware container with lemonade. Add a pkg. of frozen mixed berries. Freeze. Just before serving, remove from tupperware and float in punch.
