Yes, you did read the title right! How many of you would have read a post about Brussel Sprout Slaw? Well, you will be glad you did.
It is really a wonderfully yummy salad!
Even if you are not a brussel sprout fan, give this a try... it is scrumptious...
My sister made this for us recently... she is an AMAZING cook... we all but licked our plates!
This is not rocket science, so don't be thrown off by the lack of exact measurements. It will all work out just fine!
LISA'S BRUSSEL SPROUT SLAW
1 or 2 boxes fresh brussel sprouts
lemon dressing, follows
1/2 cup shredded Manchego cheese
1/2 cup shredded Manchego cheese
toasted macadamia nuts
Cut the bottom off of each brussel sprout. Peel off outside leaves.
Slice in thin slices...
and then chop in thin ribbons.
Put the brussel sprouts and cheese in a salad bowl. Toss.

Make lemon vinaigrette:
Mix 1/4 cup of olive oil, 2-4 TBS fresh squeezed lemon, 1/4 tsp grainy mustard and 1/2 tsp salt in a jar with a tight fitting lid. Shake vigorously.
Pour over shredded brussel sprouts.
Plate and top with toasted macadamia nuts.
EASY-PEASY, YUMMY GOOD!
